Toasted sesame vinaigrette

    Toasted sesame oil, ginger and a little soy sauce give this vinaigrette an Asian flair. Use this vinaigrette as a dipping sauce for spring rolls or as a salad dressing. Your salad can be as simple as grated carrot and cucumber.

    • 100ml groundnut oil
    • 1 tablespoon toasted sesame oil
    • 2 tablespoons rice vinegar
    • 1 tablespoon soy sauce
    • 1 teaspoon Dijon mustard
    • 1 teaspoon honey
    • 1 teaspoon grated root ginger
    • 1 tablespoon minced spring onion
    • 1 teaspoon sesame seeds
    • 1 teaspoon grated shallot
    • salt and pepper

    1. Whisk together the groundnut oil, toasted sesame oil, rice vinegar and soy sauce in a bowl. Whisk in the Dijon mustard, honey, root ginger, spring onion, sesame seeds and shallot, and season to taste with salt and pepper.
    2. Store in an airtight jar in the fridge.
