Garlic and lemon vinaigrette

    This vinaigrette is pretty zingy - the fresh garlic is spicy and the lemon is tart. Make a salad of delicate lettuces with orange and grapefruit segments, or try it on fresh tomato and avocado chunks.

    Serves: 6 

    • 120ml extra virgin olive oil
    • 2 tablespoons white wine vinegar
    • 2 tablespoons lemon juice
    • 1 teaspoon Dijon mustard
    • 2 or 3 garlic cloves, crushed
    • 1 teaspoon runny honey
    • 1/2 teaspoon dried thyme
    • salt and ground black pepper

    1. Whisk together the olive oil, vinegar, lemon juice, Dijon mustard, garlic, honey and dried thyme. Season to taste with salt and pepper. Let stand for 20 minutes before using.
