Lavender honey mustard barbecued chicken

    Nothing says summer like lavender, unless it's barbecue. Season chicken breast fillets with an herbed honey mustard that also serves as a sauce.

    Serves: 4 

    • 1 lemon, zested and juiced
    • 1 tablespoon olive oil
    • 2 tablespoons grainy mustard
    • 4 tablespoons honey
    • 1 teaspoon white wine vinegar
    • 1 teaspoon lavender, crushed
    • 1/2 teaspoon herbes de Provence
    • 4 chicken breast fillets, with skin
    • salt and ground black pepper

    1. Preheat a barbecue for medium heat.
    2. Whisk together the lemon juice and zest, olive oil, mustard, honey, vinegar, lavender and herbes de Provence. Set aside half of the sauce. Brush the remaining sauce over the chicken breast fillets. Season with salt and pepper.
    3. Barbecue the chicken breast fillets, turning often, until no longer pink at the centre and skin is crisp. Serve with the reserved sauce.
