    About this recipe: Hot paella using corned beef. Great when the fridge is empty of meat! It's a one-pot meal using ingredients from the storecupboard.

    Ingredients
    Serves: 4 

    • 1 large red onion, minced
    • 1 red pepper, minced
    • 4 garlic cloves, minced
    • 1 small red chilli, minced
    • vegetable oil
    • 1 large tin corned beef, chopped into small chunks
    • 1 teaspoon ground tumeric
    • 1 teaspoon paprika
    • 250g white long grain rice
    • 1 tablespoon Worcestershire sauce
    • 2 "splodges" tomato ketchup
    • 900ml (1 1/2 pt) vegetable stock

    Method
    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Fry onions, garlic, pepper and chilli for about 5 minutes in a little vegetable oil.
    2. Add corned beef and fry for 3 to 5 minutes. Add turmeric and paprika and cook for a minute. Then stir in the rice, Worcestershire sauce and ketchup and cook for about a minute.
    3. Pour in the stock and bring to the boil. Simmer for around 15 to 20 minutes, until rice is fully cooked. May need to top up a bit with water if sticking to bottom of frying pan.

    Brilliant recipe, amazingly quick and simple, full on flavour. Great one for when you can't really be bothered cooking but still want something with something to it. - 02 Jan 2015
