Tuna macaroni cheese

    Comfort food from the oven, tuna and peas are tasty in this child-friendly macaroni cheese. Serve with steamed green vegetables or a small green salad.

    Serves: 4 

    • 300g macaroni
    • 200ml single cream
    • 250ml semi-skimmed milk
    • 1 (200g) tin tuna, drained
    • 1 pinch ground nutmeg
    • 100g mature Cheddar, grated
    • 250g frozen garden peas
    • salt and freshly ground black pepper
    • 25g Parmesan cheese, grated

    1. Preheat the oven to 200 C / Gas 6. Bring a large pan of lightly salted water to the boil. Tip in the macaroni, and cook for 3 minutes less than it says on the packet instructions.
    2. Pour the cream and milk into a casserole and bring to the boil. Stir in the tuna, nutmeg, Cheddar cheese and peas. Season with salt and pepper to taste, then add the drained macaroni and stir well.
    3. Pour into a lightly buttered 1.5 litre ovenproof dish or four 375ml individual dishes. Sprinkle over the Parmesan cheese.
    4. Bake in the preheated oven until golden brown, about 30 minutes for a large dish, or about 20 minutes for individual dishes.
