About this recipe: This is one of the dishes I serve on Thanksgiving. Since our youngest son emigrated to Seattle in 2003 we have kept Thanksgiving. Really, as an excuse to have yet another dinner party.

Serves: 10 

  • 1.8kg (4 lb) yams
  • 110g (4oz) butter
  • 3 tablespoons maple syrup
  • 1 tablespoon chopped fresh parsley

  1. Peel yams and cut into 1cm slices. Cut the slices into 1cm strips.
  2. Tip half the yams into a large pan of boiling, salted water, cover and simmer for 5 minutes or until tender but not too soft.
  3. Lift out yams with a slotted spoon and tip into a sieve.
  4. Hold sieve under the cold tap and then repeat the process with the remaining yams.
  5. Melt half the butter and half the maple syrup together with 1 tablespoon of water in a large pan.
  6. Add half the yams and cook over a low heat for about 10 minutes. The pan should be almost dry by the time they are finished.
  7. Keep warm while you cook the rest of the yams.
  8. Toss with the parsley and serve with the turkey.
