Classic aïoli

    The famous mayonnaise from southern France goes with veg, chips, prawns, fish, sandwiches etc.

    Makes: 1 bowl

    • 6 garlic cloves, minced
    • 2 tablespoons olive oil
    • 2 egg yolks
    • 250ml olive oil
    • 2 tablespoons lemon juice
    • salt and pepper

    1. Place garlic in a mortar with 2 tablespoons olive oil. Crush with a pestle till it becomes a paste.
    2. Remove to a bowl and add yolks. Beat with a with whilst gradually adding 250ml olive oil till it thickens.
    3. Add lemon juice, salt and pepper and chill till serving.


    If you don't have lemon juice you may use vinegar instead but classic aioli is made with lemon juice.
