Bulgarian courgette bake

    In Bulgaria this dish is made from small, 15cm long courgettes. The smaller they are, the more taste they have. This bake is delicious served both cold and warm and best with garlic yoghurt sauce.

    Serves: 6 

    • 5 small courgettes, grated and drained
    • 250g feta cheese, crumbled
    • 3 eggs, beaten
    • 5 tablespoons fine semolina
    • 1 bunch fresh dill or parsley, minced
    • 2 cloves garlic, minced
    • pepper, to taste

    1. Preheat the oven to 180 C / Gas 4. Grease a baking dish.
    2. In a large bowl, combine the courgettes, feta cheese, eggs, semolina, dill and garlic. Mix well. Season with pepper to taste.
    3. Pour the mixture into the prepared baking dish. Spread evenly so the layer is not thicker than 3cm.
    4. Bake for 40 minutes until golden brown. Slice and serve.


    It's important that the courgettes are squeezed well. And don't add salt because feta cheese is already salty enough.
