This is a popular Russian recipe. Sweet sour cream filling is poured on top of thinly sliced tart apples and baked to perfection. Sprinkle apples with cinnamon if you like, for extra flavour.

For the base
250g plain flour
100g soured cream
150g melted butter
1/2 teaspoon bicarbonate of soda
1/4 teaspoon salt
For the filling
200g soured cream
2 tablespoons plain flour
200g caster sugar
1kg tart green apples (i.e. Granny Smith), peeled, cored and sliced thinly

Preheat oven to 180 C / Gas 4. Grease a deep 23cm cake tin and line with greaseproof paper.
For the base:
In a mixing bowl, combine the flour, soured cream, melted butter, bicarb and salt and mix well until it comes together. Set to one side.
For the filling:
In a bowl, lightly beat the egg then add the soured cream, flour and sugar.
Transfer the base mixture to the prepared cake tin and press down with your hands. Layer the apples on top of the base then pour the soured cream mixture on top.
Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 50 minutes. Remove from the oven and allow to cool in the tin (the filling with get firmer as the pie cools). Once cooled completely, transfer to a serving plate then slice and enjoy.
