This is a popular Russian recipe of roast pork stuffed with cheese and tomatoes. For best results, remove the foil to let the meat brown just before it is done.

1.5kg pork roasting joint
2 onions, sliced
3 tomatoes, sliced
150g grated cheese (e.g. Gouda)
1 clove garlic, crushed
salt and pepper to taste

Preheat the oven to 180 C / Gas 4.
Take a whole side of pork and cut it into 1cm slices, stopping at about 2cm from the bottom of the roast (slicing so that the cut resembles a book).
Stuff every slice of pork with onions, and then with tomatoes and cheese. Crush the garlic and mix with salt (1/2 teaspoon), then add pepper and mustard. Cover the pork everywhere with the mustard and garlic mixture. Press the slices firmly together, then wrap in foil.
Roast for approximately 2 hours. To let the meat brown nicely, unfold the foil 20 to 30 minutes before the pork is ready.
