Cheese and tomato stuffed pork

    This is a popular Russian recipe of roast pork stuffed with cheese and tomatoes. For best results, remove the foil to let the meat brown just before it is done.

    Serves: 10 

    • 1.5kg pork roasting joint
    • 2 onions, sliced
    • 3 tomatoes, sliced
    • 150g grated cheese (e.g. Gouda)
    • 1 clove garlic, crushed
    • salt and pepper to taste
    • 3 tablespoons prepared mustard

    1. Preheat the oven to 180 C / Gas 4.
    2. Take a whole side of pork and cut it into 1cm slices, stopping at about 2cm from the bottom of the roast (slicing so that the cut resembles a book).
    3. Stuff every slice of pork with onions, and then with tomatoes and cheese. Crush the garlic and mix with salt (1/2 teaspoon), then add pepper and mustard. Cover the pork everywhere with the mustard and garlic mixture. Press the slices firmly together, then wrap in foil.
    4. Roast for approximately 2 hours. To let the meat brown nicely, unfold the foil 20 to 30 minutes before the pork is ready.
