Makes: 16 lemon biscuits
150g plain flour
110g icing sugar
1 teaspoon baking powder
1 teaspoon lemon extract
Method Prep:15min › Cook:45min › Ready in:1hr
Preheat the oven to 200 C / Gas 6. Grease a baking tray.
In a large bowl, combine the flour, sugar, baking powder, milk and egg, beat thoroughly for 4 minutes. Add lemon extract and mix for a further 4 minutes. If the mixture is too runny, gradually add a little more flour.
Spoon the mixture onto the prepared baking tray making 4 rows with 4 biscuits in each.
Bake for 45 minutes until golden brown. Remove from the oven and cool before serving.
