Lovely lemon biscuits

    These tasty biscuits have a lovely lemon flavour and light crunch that is sure to satisfy citrus biscuit enthusiasts everywhere.

    Makes: 16 lemon biscuits

    • 150g plain flour
    • 110g icing sugar
    • 1 teaspoon baking powder
    • 350ml milk
    • 1 egg
    • 1 teaspoon lemon extract

    1. Preheat the oven to 200 C / Gas 6. Grease a baking tray.
    2. In a large bowl, combine the flour, sugar, baking powder, milk and egg, beat thoroughly for 4 minutes. Add lemon extract and mix for a further 4 minutes. If the mixture is too runny, gradually add a little more flour.
    3. Spoon the mixture onto the prepared baking tray making 4 rows with 4 biscuits in each.
    4. Bake for 45 minutes until golden brown. Remove from the oven and cool before serving.
