Red cabbage salad

    This red cabbage salad is tossed with a dressing of soured cream, mayonnaise, and a little cider vinegar. My husband's favourite!

    Serves: 6 

    • 1/2 head large red cabbage, grated
    • 1/2 onion, chopped
    • 2 tart apples (e.g. Granny Smith) - peeled, cored and julienned
    • 80ml soured cream
    • 80g mayonnaise
    • 3 tablespoons apple cider vinegar
    • 1/2 teaspoon salt
    • 1/2 teaspoon caster sugar
    • 1/2 teaspoon caraway seeds (optional)
    • 1/4 teaspoon ground black pepper

    1. In a salad bowl, combine the cabbage, onion and apples.
    2. In a separate bowl combine the remainder of the ingredients to make the dressing. Whisk until well combined, then pour the dressing over the salad and toss well until the vegetables are coated. Serve immediately or place in the fridge to chill for 20 minutes before enjoying.
