Chicken salad with prunes

    This sweet and savoury chicken salad can be served on its own or as a sandwich filler.

    Serves: 6 

    • 400g chicken breast fillets
    • 2 tablespoons oil
    • 2 onions
    • 2 to 3 carrots
    • 125g dried prunes, chopped
    • mayonnaise

    1. Roast or boil chicken breasts. Let cool completely and cut into cubes.
    2. Heat 1 tablespoon oil in a frying pan and fry carrots on medium heat till lightly coloured, they should still have some bite. Remove from the pan and set to one side.
    3. Add 1 tablespoon oil to the pan as needed and fry the onion on medium heat till browned, about 10 minutes, stir often so they don't burn. Let cool.
    4. Add cooled chicken, carrot, onion, prunes and mayonnaise to a boil and mix. Salt to taste and chill till serving.
