1 head of garlic

5 blackcurrant leaves
1 teaspoon black peppercorns
2 green apples
1kg small pickling cucumbers
3 tablespoons fine salt without added iodine

Layer garlic, herbs and black pepper in a large jar or a glazed or enameled pot. Cut apples into quarters. Place apples and cucumbers into jars.
Bring water to the boil, add salt and stir to dissolve.
Pour hot brine over the cucumbers. Let stand 12 to 24 hours at room temperature, then store in the refrigerator.
