Russian 'garnet bracelet' salad

    This classic Russian salad is called a 'garnet bracelet' because of the pomegranate seeds that resemble garnets. Layers of beetroot, potato, egg and chicken make this a fantastically different option for lunch or a buffet.

    Serves: 8 

    • 2 beetroot
    • 2 potatoes
    • 2 carrots
    • 2 hard boiled eggs, peeled
    • 1 onion, chopped
    • 1 tablespoon oil
    • 200g cooked chicken, diced
    • seeds of 1 to 2 pomegranates
    • 1 handful walnuts
    • mayonnaise, as needed
    • salt and pepper to taste

    1. Boil unpeeled beetroot, carrots and potatoes in a large pan of water until tender. Drain, let cool, then peel. Coarsely grate vegetables and eggs into separate mixing bowls.
    2. Heat the oil in a frying pan over medium heat. Add the onion and cook and stir till softened.
    3. Place a small glass in the middle of a serving plate. Layer salad around the glass to get a bracelet shape in the following order:
    4. 1st layer: potatoes, mayonnaise
    5. 2nd layer: 1/2 the beetroot, mayonnaise
    6. 3rd layer: carrots, mayonnaise
    7. 4th layer: walnuts
    8. 5th layer: 1/2 the chicken, mayonnaise
    9. 6th layer: sautéed onion
    10. 7th layer: eggs, mayonnaise
    11. 8th layer: 1/2 the chicken, mayonnaise
    12. 9th layer: 1/2 the beetroot
    13. Remove the glass and cover the salad with a layer of mayonnaise. Garnish the top of the salad with pomegranate seeds.
