Russian chicken and potato salad

    This layered Russian chicken potato salad is made in the shape of a pineapple so it is an eye catcher on a buffet table!

    Serves: 8 

    • 2 to 3 potatoes
    • 3 eggs
    • 1 white or red onion, diced
    • 300 to 400g cooked chicken, diced
    • 100g grated cheese, such as sharp Cheddar cheese
    • 4 to 6 pickled cucumbers, diced
    • mayonnaise
    • salt and pepper
    • 150g walnuts halves for garnish
    • spring onions for garnish

    1. Thoroughly wash the potatoes and boil them in water with their skins on till cooked through, 20 to 30 minutes. Let cool, peel and grate coarsely. Hard boil the eggs and let cool. Peel and grate coarsely into separate bowl.
    2. Layer these ingredients in an oval serving dish in the following order: potatoes, onions, half of the chicken, pickles, remaining chicken, cheese and hard boiled eggs. Season each layer with salt and pepper and a spread a generous amount of mayonnaise on top of each layer.
    3. Cover the top layer thoroughly with mayonnaise. Garnish with walnut halves and spring onion to create the appearance of a pineapple.

    Substitution Idea

    You can substitute chopped walnuts for walnut halves. Instead of walnuts, you can use tinned sliced mushrooms, arranging them on top of the salad to resemble scales. You can also garnish the salad with sliced green olives.
