Tiramisu dessert

    The Italian name 'tiramisu' translates to 'pick me up'! This version is quick and easy to whip up for a dinner party dessert.

    Serves: 4 

    • 4 eggs, separated
    • pinch of salt
    • 100g sugar
    • 250g mascarpone cheese
    • 150ml cold espresso
    • 200g sponge fingers
    • 50g grated chocolate
    • a few tablespoons cocoa powder

    1. In a clean bowl, whip the whites and a pinch of salt bowl until stiff peaks form.
    2. In another bowl, whisk the egg yolks with 100g sugar until the mixture becomes light and fluffy. Mix in mascarpone cheese. Fold in the whipped egg whites. Add grated chocolate.
    3. To assemble: Dip sponge fingers into coffee and arrange in an even layer in a rectangular dish. Layer half of the mousse mixture on top and sprinkle with cocoa powder. Repeat the layering, finishing with the cream mixture and a sprinkling of cocoa powder.
    4. Refrigerate for at least a couple of hours. Serve cold.
