About this recipe:
I love the melt in your mouth texture of shortbread! These ornate little flower shortbread are made by using a piping bag giving an extra fancy dimension to this national favourite.
Makes: 20 shortbread flower biscuits
70g caster sugar
1 egg white, lightly beaten
1 teaspoon vanilla extract
250g plain flour
jam, for decoration
- Preheat the oven to 200 C / Gas 6. Line a baking tray with baking parchment.
- In a mixing bowl, beat together the butter and caster sugar until pale and creamy. Add the egg white and vanilla extract and mix thoroughly. Sift in the flour and fold together until well integrated.
- Place the shortbread mixture into a piping bag and using a simple cone nozzle, pipe flower shapes directly onto the prepared baking parchment and decorate the centres with a little dollop of jam.
- Bake in the preheated oven for 10 minutes until slightly golden. Remove from the oven and allow to cool fully before enjoying.
