Chicken breasts with prunes and red wine

    If you like sophisticated results but hate to spend too much time in the kitchen, this recipe is for you! This is a lovely meal for two, ideal for romantic dinners and Valentine's Day.

    Serves: 2 

    • 80g dried prunes, stoned
    • 250ml red wine
    • 300g chicken breast fillets
    • 2 tablespoons plain flour
    • 2 tablespoons olive oil
    • 1 sprig thyme
    • salt and pepper to taste

    1. Place the dried prunes in a microwave safe bowl then pour over the red wine. Heat in the microwave for 30 seconds.
    2. Place the chicken breast fillets between two sheets of cling film then place on a cutting board. Hammer the breasts with a meat mallet or rolling pin to flatten. Remove from the cling film and toss in the flour.
    3. Warm the oil in a frying pan over a medium heat then brown the chicken for 5 minutes on each side, or until the chicken is no longer pink in the centre. Remove from the pan and set aside.
    4. In the same pan, add the prunes and wine, thyme, salt, and pepper and simmer for 5 minutes. Add the browned chicken breast to the pan and remove from the heat. Serve onto warmed plates and enjoy immediately.

    This is OK as far as it goes but it needs something more, perhaps some garlic and chopped shallots cooked in the oil before frying the chicken then added back at the end. Some more herbs would probably help as well. It's a decent enough recipe but it feels incomplete  -  07 Aug 2017
