80g dried prunes, stoned
250ml red wine
300g chicken breast fillets
2 tablespoons plain flour
2 tablespoons olive oil
1 sprig thyme

Place the dried prunes in a microwave safe bowl then pour over the red wine. Heat in the microwave for 30 seconds.
Place the chicken breast fillets between two sheets of cling film then place on a cutting board. Hammer the breasts with a meat mallet or rolling pin to flatten. Remove from the cling film and toss in the flour.
Warm the oil in a frying pan over a medium heat then brown the chicken for 5 minutes on each side, or until the chicken is no longer pink in the centre. Remove from the pan and set aside.
In the same pan, add the prunes and wine, thyme, salt, and pepper and simmer for 5 minutes. Add the browned chicken breast to the pan and remove from the heat. Serve onto warmed plates and enjoy immediately.
