These turkey and pepper meatballs are a delicious alternative to beef. Serve by themselves as a tasty party starter, or serve over pasta or with veggies for a main meal.
1 person made this
2 medium peppers, seeded and halved
500g turkey mince
1 onion, finely chopped
2 cloves garlic, minced
salt and pepper, to taste
1/3 teaspoon dried rosemary
150g feta cheese, finely chopped
2 to 3 tablespoons olive oil
Method Prep:15min › Cook:15min › Ready in:30min
Place the peppers in an ovenproof dish and grill under a medium-high heat for a few minutes, turning once, until starting to soften. Remove from the heat, cut into short slices and set aside.
In a large mixing bowl, combine the turkey mince with the egg and mix well with the hands. Add the onion and garlic, seasoning and rosemary followed by the sliced pepper and feta cheese and mix until well integrated. Using wet hands, form into small meatballs.
Warm the oil in a frying pan over a medium heat and add the meatballs, cooking in batches if necessary. Fry for about 15 minutes, turning frequently until the turkey is no longer pink in the centre. Remove from the pan and serve hot.
