Fried tofu with wild rice

    Serves: 3 

    • 200g wild rice
    • 200g firm tofu
    • 2 tablespoons plain flour
    • 2 tablespoons sesame oil or olive oil
    • 1 tablespoon fresh root ginger, minced
    • 2 cloves of garlic, minced
    • 2 tablespoons soy sauce
    • 1 tablespoon orange juice
    • salt and pepper to taste

    1. Cook wild rice with twice the amount of liquid than rice. Cook on low heat without stirring.
    2. Cut tofu into slices 1cm thick. Dab with a paper towel to absorb excess liquid.
    3. Salt and pepper to taste. Dip in flour. Heat half of the oil in a frying pan and fry tofu until golden. Remove tofu from the pan and set to one side.
    4. Heat the rest of the oil and fry garlic and ginger till fragrant. Add orange juice and soy sauce.
    5. Place tofu back in the pan. Let the mixture come to the boil then turn off the heat. Combine with rice and mix well.
