Buckwheat with creamy mushroom sauce

    Buckwheat is cooked and served with a creamy mushroom and onion sauce. Serve as a side to chops or as a main vegetarian dish.

    Serves: 4 

    • 200g buckwheat
    • 250g mushrooms, sliced
    • 200g single cream
    • 1 onion, finely chopped
    • 2 tablespoons butter
    • 2 tablespoons olive oil
    • salt and pepper to taste

    1. Cook buckwheat according to instructions on packaging.
    2. Heat 2 tablespoons butter and 2 tablespoons olive oil in a pan over medium heat; add onion and fry until softened. Season with a pinch of salt. add sliced mushrooms and cook for 2 or 3 minutes to soften and brown.
    3. Stir in cream and simmer the sauce for a few minutes until the cream reduces. Remove from heat and season with freshly ground back pepper.
    4. Pour mushroom sauce on top of hot cooked buckwheat.
