    Serves: 25

    • 500g potatoes
    • 1 medium onion, finely chopped
    • 1 egg, lightly beaten
    • 2 tablespoons plain flour
    • salt and pepper, to taste
    • 60ml olive oil
    • 250g creme fraiche
    • 200g smoked salmon, thinly sliced

    Prep:20min  ›  Cook:25min  ›  Ready in:45min

    1. Grate the potatoes with their skins on and remove as much liquid and moisture as possible by dabbing with kitchen paper or placing in a dry tea towel and wringing. Transfer to a bowl and mix in the onions, egg, flour, salt and pepper until well combined.
    2. Warm the oil in a large frying pan over a medium heat then add heaped tablespoons of the mixture into the pan. Fry on one side until crispy, 5 to 8 minutes, then turn over and fry the other side until crispy, golden brown and tender. Repeat until the mixture is used up. Remove from the pan and place on kitchen paper to drain and cool.
    3. Transfer to a serving platter and place a little creme fraiche on top of each latke followed by a piece of smoked salmon. Serve.

The latkes are lovely garnished with fresh chives.
