Pasta with broccoli and anchovies

    Somehow a lot of people seem to dislike broccoli, but I think the issue lies in how you make it – you must not overcook it, then broccoli will remain juicy and crunchy. Simple pasta, mixed with broccoli fried in garlic butter with anchovies – is delicious.

    Serves: 4 

    • 350g farfalle pasta
    • 400g broccoli
    • 2 cloves of garlic, minced
    • 8 anchovies packed in olive oil, minced
    • 2 tablespoons butter
    • 2 tablespoons olive oil
    • salt and pepper to taste
    • grated Parmesan cheese to serve

    1. Cook pasta according to the package directions depending on the variety, about 7 to 10 minutes.
    2. Separate broccoli into florets. Bring water to the boil, add salt and broccoli. Cook for 3 to 5 minutes.
    3. Melt 2 tablespoons of butter and and olive oil and fry anchovies and garlic for about a minute.
    4. Add broccoli and mix well. Add salt and pepper to taste.
    5. Drain pasta and place in the pan. Mix well and reheat for 1 minute.
    6. Sprinkle with Parmesan cheese and serve.
