Turkey meatballs in tomato sauce

    These delicious meatballs are made with turkey mince and are an ideal alternative to beef. Delicious served over pasta or with rice.

    Serves: 6 

    • 1 slice wholemeal bread
    • 50ml milk
    • 500g minced turkey
    • 1 small bunch fresh parsley, chopped
    • 200g frozen spinach, defrosted
    • salt and pepper, to taste
    • 4 tablespoons olive oil
    • 1 onion, chopped
    • 2 cloves garlic, chopped
    • 1 carrot, finely sliced
    • 300g passata

    1. Soak the bread slice in milk for a few minutes then transfer to a mixing bowl. Add the turkey, parsley, spinach and seasoning and mix well with the hands. Form into meatballs.
    2. In a frying pan over a medium heat, warm 2 tablespoons of the oil then brown the meatballs all over for 3 minutes. Remove from the pan and set aside.
    3. Add the remaining oil to the frying pan then add the onion and garlic and cook and stir until soft, about 4 to 6 minutes. Add the carrots and cook and stir for a minutes. Pour in the passata and add the meatballs back in. Bring to a simmer and cook for 15 to 20 minutes or until the meatballs are no longer pink in the centre.
    4. Remove from the heat and serve the meatballs in their sauce with some rice or pasta.
