Avocado and prawn salad with dill

    This seafood salad is very easy to make and looks stunning on the table because it’s served in avocado shells.

    Ingredients
    Serves: 6 

    • 3 ripe avocados
    • 2 tablespoons lemon juice
    • 150g small cocktail prawns, shelled and deveined
    • 2 tablespoons dill
    • 1 stalk celery
    • 1 clove of garlic
    • 2 tablespoons mayonnaise
    • salt and white pepper to taste

    Method

    1. Cut avocado in half. Remove the pit and remove the flesh with a tablespoon, leaving the skins intact.
    2. Cube avocado and drizzle with lemon juice keep it from turning brown.
    3. Bring 500ml water to the boil, add the prawns and simmer until pink, about 2 to 3 minutes. Drain and transfer cooked prawns to a bowl of cold water to stop the cooking process.
    4. Chop dill and celery as finely as possible. Grate or crush garlic.
    5. Combine prawns, garlic, and dill with avocado and mix. Toss with mayonnaise. Add salt and pepper to taste.
    6. Spoon into avocado shells and serve.
