Lavender and lemon biscuits

    These lavender biscuits are elegant, dainty and sophisticated, just perfect for Mother's Day or other special occasion.

    Serves: 18 

    • 120g butter
    • 100g caster sugar
    • zest of 1 lemon
    • 180g plain flour
    • 1 tablespoon dried lavender flowers

    1. Preheat oven to 150 C / Gas 2. Line a baking tray with baking parchment.
    2. In a bowl, cream together the butter, sugar and lemon zest. Add the flour and lavender and bring the mixture together into a ball.
    3. Turn out onto a lightly floured work surface, or sandwich between two sheets of baking parchment, and roll out to 5mm thickness. Cut into biscuits using your favourite biscuit cutters.
    4. Bake the biscuits in the preheated oven for 10 to 12 minutes until firm. Remove from the oven and allow to cool on the tray for a few minutes before transferring to a cooling rack to cool completely.

    A great recipe! Very easy to make; great results. However, the lavender taste wasn't very strong so would use more next time. I made these for my mum, using culinary lavender given to me by my mother-in-law (decorated with fresh lavender from my garden). Thank you for sharing this brilliant recipe!  -  03 Aug 2016
