Roast chicken with rice and seed stuffing

    This chicken has an unusual filling: rice, pumpkin and sunflower seeds.

    Serves: 4 

    • 200g brown rice
    • 1 whole small chicken
    • 5 garlic gloves, cut lengthwise in to 2 to 3 pieces
    • 1 onion, minced
    • 2 tablespoons butter
    • 75g pumpkin seeds
    • 75g sunflower seeds
    • salt and pepper to taste
    • 2 tablespoons mayonnaise

    1. Preheat oven to 200 C / Gas 6.
    2. Cook rice for 10 minutes.
    3. Wash chicken and pat dry with a kitchen towel. Make several cuts on the skin and insert a piece of garlic into each cut.
    4. Heat butter in a frying pan and fry onion until translucent. Add to a bowl and combine with rice and seeds. Mix well. Add salt and pepper to taste.
    5. Stuff the chicken with the mixture and secure with toothpicks.
    6. Rub chicken with salt and pepper and spread mayonnaise on top.
    7. Roast till the skin is crispy, and the juices run clear, about 40 to 50 minutes.
