Rice porridge

    My family adores rice porridge as a special breakfast treat. It's basically one part rice to two parts water. Brown rice also works well but it takes a little longer to cook. You can jazz it up with berries, nuts or add a drizzle of honey.

    Serves: 4 

    • 200g short grain rice
    • 475ml water
    • 2 or 3 tablespoons caster sugar, or to taste
    • a pinch of salt
    • 225ml milk
    • 2 tablespoons butter

    1. Place the rice in a fine mesh sieve and rinse under cold water.
    2. Bring 475ml water to the boil; stir in rice to prevent it sticking to the bottom or the sides, then cook without stirring for 10 minutes, or until water has completely evaporated.
    3. Add sugar and salt to taste. Stir in milk and cook for another 3 minutes.
    4. Turn off the heat; stir in butter and let stand for 2 or 3 minutes before serving.

    Very delicious! nice dish to eat before school! make sure to make some for the kids!.... would definitely make this again! 2 cups of rice makes ALOT! I used 2 cups because I thought it wouldn't be enough for me, turned out to be WAYYY to much... The only tweaks I did was that I put 2 cups of rice and I didn't put butter in it.... turned out thick and beautiful, it had the same consistency of an oat porridge! fantastic, thanks user for this beautiful recipe!  -  09 Apr 2015

    For me it's a lot lighter than Oats, exactly what I needed. I have to say personally the butter was very overwhelming but overall very delicious.  -  04 Apr 2014
