Aubergine with sesame

    A vegan main course with an Asian touch: pan fried and oven roasted aubergine flavoured with sesame. Serve with rice.

    Ingredients
    Serves: 4 

    • 2 medium aubergine
    • 2 tablespoons vegetable oil
    • 3 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • 2 tablespoons sesame seeds
    • 1 tablespoon sugar

    Method

    1. Cut aubergines lengthwise into 1cm slices. Soak in cold water for a few minutes, then drain and dab dry with paper towels (if you soak aubergine it will absorb less oil during frying).
    2. Heat vegetable oil on high heat and fry aubergine on both sides till lightly coloured.
    3. In a small bowl stir soy sauce with sesame oil, seeds and sugar.
    4. Preheat oven to 200 C / Gas 6. Place fried aubergine slices on baking tray and brush with sauce.
    5. Roast until the sauce starts to caramelise and turn brown, about 15 minutes.
