    About this recipe: This traditional Polish soup, known in Poland as "staropolska zupa cebulowa" is comforting, rustic and a great choice in the winter months.

    Ingredients
    Serves: 4 

    • 2 tablespoons butter
    • 600g (3 large) onions, sliced
    • 2 root parsleys, sliced
    • 1 carrot, sliced
    • salt and pepper, to taste
    • 100ml soured cream
    • croutons, to serve (optional)

    Method

    1. In a large saucepan, melt the butter and add the onions, sliced root parsley and carrot. Pour in just enough water to cover, season, then simmer until softened. Remove from the heat and allow to cool.
    2. Blend the soup in a food processor, or using a hand-held liquidiser, until smooth.
    3. In a bowl, mix the soured cream with 2 tablespoons of the hot soup until blended then add the mixture to the soup, stirring constantly taking care not to boil. Remove from the heat and serve hot.
