This goat's cheese omelette is a delicious breakfast for a relaxed a sunny morning and great served with some fresh fruit and hot buttered toast.

3 tablespoons chopped fresh chives
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh parsley
salt and pepper, to taste
3 teaspoons butter
100g goat's cheese, crumbled
1 tomato, sliced

In a bowl, whisk the eggs with the chopped herbs, salt and pepper.
In a frying pan over a medium heat, melt the butter and pour in the egg mixture. Fry for few minutes until the egg partially sets. Sprinkle with goat cheese, arrange tomato slices, cover and cook for few more minutes. Remove from the heat and serve hot.
