Ingredients
Serves: 2
1 tablespoon olive oil
1 onion, chopped
1 tomato, peeled and chopped
1 smoked mackerel
5 eggs, beaten
3 tablespoons unsalted butter
1/2 teaspoon dried thyme
1/2 bunch chopped fresh chives
1 teaspoon chopped fresh dill
salt and pepper, to taste

In a frying pan, heat the oil and add the onion. Add the tomato and cook and stir for a few minutes. Flake the fish and discard any bones.
In a bowl beat the eggs, fish and onion and tomato.
Melt the butter in a frying pan then pour in egg mixture. Sprinkle with thyme, chives and dill and season with salt and pepper to taste. Cover and cook until set. Serve immediately.
