Here's a recipe for a balanced quick and easy dinner. If you have leftover vegetables, use those. I buy frozen veg to make this more quickly, but you can always use fresh veg if you like.

Ingredients
Serves: 4
200g beef mince
1 tablespoon spice mix of your choice
1 tablespoon olive oil
1 (500g) packet frozen vegetable mix
Method Prep:15min › Cook:10min › Ready in:25min
Stir the beef mince together with the spices, and form into 12 small meatballs.
Heat the olive oil in a frying pan and fry the meatballs, turning often, until golden on all sides, about 5 minutes.
Add the vegetables to the pan, and cook until the meatballs are no longer pink at the centre and the vegetables heated through, about 5 minutes more.
