2 handfuls dried apricots, stoned
3 tablespoons runny honey
3 teaspoons toasted sesame seeds
1/2 teaspoon ground cinnamon
6 chicken breast fillets
1/2 teaspoon curry powder

Preheat the barbecue to a medium-high temperature.
In a small bowl, combine the apricots, honey, sesame seeds and cinnamon.
Pat the chicken breast dry and rub with curry powder. Cut each breast lengthways but not all the way through, to make a pocket. Stuff each pocket with the apricot mixture and secure with skewers.
Wrap the chicken in tin foil or place on a tray suitable for using on the barbecue and cook for 5 to 10 minutes on each side until the chicken is no longer pink in the centre and the juices run clear. Remove from the BBQ and serve.
