BBQ stuffed tomatoes

    These delicious BBQ stuffed tomatoes are filled with a lovely mixture of mozzarella, herbs and mushrooms. A really lovely option for vegetarians.

    Serves: 6 

    • 6 large tomatoes, not very ripe
    • For the stuffing
    • 4 mushrooms, chopped
    • 1 onion, chopped
    • 1 bunch chopped fresh parsley
    • 1 tablespoon sesame seeds
    • 100g mozzarella cheese, diced
    • 4 cloves garlic, minced
    • 1 teaspoon herbes de Provence
    • 1 teaspoon dried basil
    • salt and pepper, to taste

    1. Slice off the top of each tomato and gently scoop out the pulp and seeds. Reserve the tomato tops.
    2. In a mixing bowl, combine all ingredients for stuffing, mix well and season with salt and pepper.
    3. Preheat the BBQ to medium-high heat.
    4. Stuff each tomato and put the top back on. Wrap each tomato in tin foil.
    5. Cook for 10 minutes until soft and the stuffing is hot inside. Remove from the heat and serve.
