These delicious BBQ stuffed tomatoes are filled with a lovely mixture of mozzarella, herbs and mushrooms. A really lovely option for vegetarians.

Ingredients
Serves: 6
- 6 large tomatoes, not very ripe
- For the stuffing
- 4 mushrooms, chopped
- 1 onion, chopped
- 1 bunch chopped fresh parsley
- 1 tablespoon sesame seeds
- 100g mozzarella cheese, diced
- 4 cloves garlic, minced
- 1 teaspoon herbes de Provence
- 1 teaspoon dried basil
- salt and pepper, to taste

- Slice off the top of each tomato and gently scoop out the pulp and seeds. Reserve the tomato tops.
- In a mixing bowl, combine all ingredients for stuffing, mix well and season with salt and pepper.
- Preheat the BBQ to medium-high heat.
- Stuff each tomato and put the top back on. Wrap each tomato in tin foil.
- Cook for 10 minutes until soft and the stuffing is hot inside. Remove from the heat and serve.
