Pan-fried sole fillets with parsley and garlic

About this recipe: Dinner doesn't get easier than this! A fabulously simple and delicious way to prepare sole. At our house, we love sole, but it is not always affordable - I use the same method for cod.

Serves: 4

  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 4 sole fillets
  • salt and ground black pepper
  • 15g parsley, chopped

Prep:5min  ›  Cook:13min  ›  Ready in:18min

  1. Heat the butter in a frying pan over medium high heat, and cook and stir the garlic until fragrant but not browned, about 1 minute.
  2. Season the sole fillets with salt and pepper, and sear in the frying pan for 2 minutes on each side. They should be quite browned.
  3. Sprinkle with the parsley, reduce the heat, cover and cook until the fish flakes easily with a fork, about 7 minutes.

Serving suggestion

Serve immediately with boiled potatoes and oven-grilled vegetables or a green salad.
