4 sole fillets

Heat the butter in a frying pan over medium high heat, and cook and stir the garlic until fragrant but not browned, about 1 minute.
Season the sole fillets with salt and pepper, and sear in the frying pan for 2 minutes on each side. They should be quite browned.
Sprinkle with the parsley, reduce the heat, cover and cook until the fish flakes easily with a fork, about 7 minutes.
Serve immediately with boiled potatoes and oven-grilled vegetables or a green salad.
