M&M® brownies

    Utterly moist and chocolaty brownies, studded with M&M's® for that occasional crunch. You can use regular or peanut. I made them with my son for his birthday, and the kids loved them.

    Serves: 8 

    • 200g plain chocolate, coarsely chopped
    • 130g butter
    • 3 eggs
    • 130g caster sugar
    • 60g plain flour
    • 2 teaspoons vanilla sugar
    • 1 pinch salt
    • 100g M&M'sreg;

    1. Preheat the oven to 180 C / Gas 4. Butter a 20cm square cake tin.
    2. Melt the plain chocolate and butter in a saucepan over very low heat, stirring often. Allow to cool.
    3. Meanwhile, beat the eggs with the caster sugar in a bowl until pale and thick. Stir in the flour, vanilla sugar, salt and melted chocolate mixture. Stir in the M&M's®. Spread into the prepared cake tin.
    4. Bake in the preheated oven for 15 minutes, not more. Remove from the oven and let cool. The brownies will continue to cook lightly and will be perfectly set yet moist when you serve them.

    Takes far longer than 15mins! I cooked for a couple more times each of 10 mins and it was still gooey in the middle.  -  22 Nov 2015
