Quick and easy Jubilee Coronation chicken

    A quick and easy Jubilee dish! This coronation chicken recipe will be a crowning contribution for your Jubilee festivities. Perfect for picnics and summer lunches and dinners. Enjoy this Coronation chicken served as a main with salad or bring it along to a party and share with your friends!

    Serves: 4 

    • 150g rice
    • 1 handful sultanas
    • 1/2 ready-roasted chicken
    • 1 large handful cashew nuts
    • 4 tablespoons mayonnaise
    • 1 tablespoon mango chutney
    • 1 tablespoon curry paste

    1. Start off by cooking the rice: cover with cold water and bring to the boil before simmering and covering - follow instructions on packet.
    2. Place sultanas in a bowl and cover with boiling water, leave to soak.
    3. Prepare your chicken: remove skin and slice up chicken into thin slices or preferred thickness. I prefer to shred the chicken with fingers rather than slice.
    4. Chop up cashew nuts in half or thirds.
    5. Once rice has cooked, drain and rinse with cold water to cool the rice down and to prevent it from cooking further and to quicken up the preparation process.
    6. Make coronation sauce: Take a bowl and add the mayonnaise, mango chutney curry paste. Adapt to taste.
    7. Combine all ingredients in a serving bowl and mix together. Now enjoy!


    For curry paste, I use whatever I have left in the fridge or am planning to use for a curry. In this case I used a Madras curry paste.


    This is a great dish for making out of your roast chicken leftovers!
