Garlic spinach with Gorgonzola

    Delicious as a side dish or stuffing for crepes, omelettes or dumplings. Fresh spinach leaves combined with Gorgonzola cheese and garlic simply melts in your mouth.

    Serves: 6 

    • 500g fresh spinach
    • 3 tablespoons olive oil
    • 5 to 10 cloves garlic, minced
    • 1 tablespoon lemon juice
    • 100g crumbled Gorgonzola cheese
    • salt and pepper, to taste

    1. Rinse the spinach and blanch in lightly salted water. Drain well.
    2. In a large pan heat the oil and add the garlic. Cook and stir until fragrant then add the spinach and stir constantly. Add the lemon juice, Gorgonzola cheese and season to taste. Serve immediately.
