About this recipe:Prized golden mirabelle plums make a wonderful crumble. You can of course use any type of plum here, but if you've found mirabelles - try this! This crumble is also healthier and lower in sugar than most.

500g stoned mirabelle plums
1 tablespoon golden syrup
40g wholemeal flour
40g unsalted butter, cut into small pieces
30g spelt flour
30g porridge oats
2 tablespoons icing sugar
1 tablespoon unsweetened apple sauce
1 tablespoon plum liqueur (optional)

Preheat oven to grill; place oven rack in middle position. Sprinkle the bottom of a 23x30cm baking dish with ground almonds and set aside.
In a large frying pan combine plums with syrup; cover and cook for 5 minutes, stirring occasionally.
Meanwhile, prepare crumble topping: In the bowl of a food processor combine the flour, butter, spelt, oats, sugar and applesauce; mix quickly to form coarse crumbles.
Add plum liqueur (if using) to plum mixture in pan and stir; spread mixture in prepared baking dish, then cover with pastry crumble, pressing it down over plum mixture with fingers.
Put dish in preheated oven for about 5 minutes, until topping is golden brown.
