About this recipe: A super simple frozen dessert made with a variety of fresh berries, yoghurt and crème fraîche. Serve in slices with a few fresh berries to garnish, or even a drizzle of chocolate sauce.


Serves: 6 

  • 200g mixed fresh berries (strawberries, raspberries, blueberries, etc.)
  • 250g natural yoghurt
  • 1 tablespoon crème fraîche
  • 2 egg whites
  • 75g icing sugar

  1. Put berries in a blender and purée, then add yoghurt and crème fraîche and blend till smooth.
  2. In a medium bowl whisk egg whites until stiff peaks form; add sugar, gradually, and continue to whisk for 1 more minute. Gently fold egg mixture into berry mixture.
  3. Pour into a 450g (1 lb) loaf tin. Cover with cling film and freeze for at least 3 hours, or overnight. Remove from freezer 20 to 30 minutes before serving, then invert onto a serving plate.

Top tip

For easy removal, line the tin with greaseproof paper or cling film. Or leave unlined and dip the tin in warm water briefly before inverting onto a serving plate.
