About this recipe: For Christmas, Easter or Valentine's Day these truffles will satisfy any chocolate addict. They are very easy to make, the hardest part is trying not to lick your fingers!


Makes: 30 truffles

  • 250ml double cream
  • 1 teaspoon vanilla extract
  • 300g plain chocolate, chopped
  • 20g butter, diced

  1. Pour cream into a small saucepan, add vanilla and bring to the boil.
  2. Add chopped chocolate to a mixing bowl and pour in cream mixture; whisk. Add butter and whisk again until consistency is smooth.
  3. Cover with cling film and chill for at least 2 hours.
  4. Once the ganache is set and firm, form balls with your hands. Roll the truffles in your choice of ground nuts, unsweetened cocoa powder, toasted desiccated coconut, etc.
