Shortbread biscuit sandwiches

    Fantastic, melt-in-the-mouth biscuits! I always ask my grandma to bake them for me. You can layer the biscuits with your favourite jam or dulce de leche. So easy and delicious!

    Serves: 20 

    • 500g plain flour
    • 300g margarine, softened
    • 16g baking powder
    • 5 egg yolks
    • 100g caster sugar
    • 2 to 4 tablespoons soured cream
    • 1 jar strawberry jam

    1. Preheat the oven to 200 C / Gas 6. Grease or line a baking tray with parchment.
    2. In a medium bowl, combine flour, margarine, baking powder, egg yolks and sugar. Mix in soured cream 1 tablespoon at a time so as the dough is firm but not sticky. Knead quickly.
    3. Roll out the dough on a lightly floured surface. Cut shapes with 6cm biscuit cutter (remember there must be pairs!). Place onto the prepared baking tray.
    4. Bake for 15 minutes until golden. Watch out because they brown quickly! Cool on a wire rack.
    5. Spread thin layer of jam on half of the biscuits and cover with the other half. Set aside for an hour so they will stick together.
