Bring a large pan of water to the boil; add lentils and cook over low heat for 30 minutes.
Put tomatoes in a small bowl and season with salt. Set aside for 15 minutes.
Drain lentils and tomatoes and mix together. Distribute mixture evenly in 6 individual bowls or ramekins, sprinkle with chopped parsley and serve warm or chilled.
