Warm Puy lentil and tomato salad

    A healthy and simple salad with minimal ingredients, minimal fuss and maximum taste! Salting the tomatoes beforehand brings out their juices, creating an instant dressing. Add a drizzle of olive oil for extra flavour, if liked.

    Serves: 6 

    • 100g Puy lentils
    • 6 fresh tomatoes - peeled, seeded and finely chopped
    • coarse sea salt to taste
    • 5 sprigs fresh parsley, finely chopped

    1. Bring a large pan of water to the boil; add lentils and cook over low heat for 30 minutes.
    2. Put tomatoes in a small bowl and season with salt. Set aside for 15 minutes.
    3. Drain lentils and tomatoes and mix together. Distribute mixture evenly in 6 individual bowls or ramekins, sprinkle with chopped parsley and serve warm or chilled.
