Mini chocolate orange cakes

    Little easy to make cakes that masquerade as a gourmet pud! These are lovely served warm with a scoop of vanilla ice cream or some luscious custard.

    Serves: 6 

    • 90g plain chocolate (70% cocoa), broken into pieces
    • 50g unsalted butter
    • 3 eggs
    • 80g caster sugar
    • 90g unsweetened apple sauce
    • 45g cornflour
    • 1 tablespoon grated orange zest
    • candied orange peel, for decoration (optional)

    1. Preheat oven to 220 C / Gas 7 and lightly grease a 6 hole muffin tin (silicone if possible).
    2. Put butter and chocolate pieces in a microwave safe bowl with a lid; cover and melt in microwave for 1 minute. Mix till smooth.
    3. Break eggs into a large bowl and add sugar; whisk to dissolve. Add apple sauce, melted chocolate mixture, cornflour and orange zest. Mix together until smooth.
    4. Pour mixture into prepared muffin tin and bake 7 to 10 minutes in preheated oven (depends on your oven). Remove and let cool at least 5 minutes before unmoulding. Decorate with orange peel (if using) and serve.

    Gluten free note

    To be sure these cakes remain gluten free, check all labels before adding ingredients, particularly the cornflour, which can sometimes have wheat-derived additives.
