About this recipe: Crusty slices of bread are rubbed with garlic and grilled with mozzarella cheese, then topped with a beautiful seasoned mixture of tomatoes and spinach. These bruschetta are perfect as a starter, or light meal served with a fresh green salad.


Serves: 4 

  • 1 baguette, sliced
  • 2 cloves garlic, halved
  • 1 ball fresh mozzarella, sliced
  • 2 or 3 tomatoes, cubed
  • 1 handful chopped fresh spinach
  • salt and freshly ground black pepper to taste
  • 2 to 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 pinch finely chopped fresh basil

  1. Preheat grill to high and line a baking tray with baking parchment.
  2. Rub the baguette slices with garlic, place on baking tray and top each with a slice of mozzarella. Grill for 5 minutes, or until bread is golden brown and cheese is melted.
  3. Meanwhile, combine tomatoes and spinach in a medium bowl and season with salt and pepper; add oil, vinegar and basil and mix well.
  4. Place a tablespoon of mixture on top of each bread and cheese slice and serve immediately.
