1 baguette, sliced
2 cloves garlic, halved
1 ball fresh mozzarella, sliced
2 or 3 tomatoes, cubed
1 handful chopped fresh spinach
salt and freshly ground black pepper to taste
2 to 3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 pinch finely chopped fresh basil

Preheat grill to high and line a baking tray with baking parchment.
Rub the baguette slices with garlic, place on baking tray and top each with a slice of mozzarella. Grill for 5 minutes, or until bread is golden brown and cheese is melted.
Meanwhile, combine tomatoes and spinach in a medium bowl and season with salt and pepper; add oil, vinegar and basil and mix well.
Place a tablespoon of mixture on top of each bread and cheese slice and serve immediately.
