Cinnamon churros

    Serves: 6 

    • 500ml water
    • 250g plain flour
    • 30g caster sugar
    • oil for frying
    • 4 tablespoons caster sugar
    • 3 tablespoons ground cinnamon

    1. Bring water and sugar to the boil. Place flour in a heatproof bowl and pour sugar water on top. Stir until mixture holds together and forms a ball. Fill mixture in a piping bag with a large star shaped nozzle.
    2. Heat a generous amount of oil in a heavy frying pan. Pipe churros directly into the hot oil and fry till golden brown, about 3 minutes from each side.
    3. Mix sugar and cinnamon in a large bowl. Remove churros form the oil with a slotted spoon, degrease briefly on kitchen paper then dredge in the cinnamon sugar.
