Polish herring salad

    This is the traditional Polish way to serve herring. It's a creamy salad with onion and pickles. Give it a try!

    Serves: 6 

    • 6 soused herring fillets or pickled rollmops
    • a few teaspoons white vinegar
    • white pepper, to taste
    • 1 large onion, chopped
    • 3 pickled cucumbers, diced
    • 1 large tart apple, diced
    • 250g soured cream
    • 3 tablespoons mayonnaise
    • 1 tablespoon mustard
    • 1 hard-boiled egg, chopped
    • 1 teaspoon chopped fresh parsley
    • a pinch of sugar

    1. Drain the herring fillets; cut into bite size pieces, drizzle generously with vinegar and season with white pepper. Set aside.
    2. In a large bowl, combine the onion, pickles and apple. Mix in cream, mayonnaise, mustard, egg and fresh parsley. Add a pinch of sugar and mix well.
    3. Add herring pieces, toss to coat and refrigerate overnight.
